Hi, I’m Jo Wilcox - food stylist and writer. I’ve previously owned a restaurant, a cake shop and a deli, and love to develop and test recipes that are easy to make, and delicious to eat.

Best of all I’m a Kiwi mum who knows how to make real recipes for real people, to be enjoyed by the whole family.

I’ve created some delicious real recipes, adding zest to family favourites, and stirring up some new taste experiences using NZ’s favourite Real mayonnaise from Best Foods.

Simple to make, and simply delicious, it’s the mayonnaise that’s lovingly called Best – because it is. And that’s for Real!

Best Brownie

Best Brownie

Makes: 15-18 slices

Ingredients

  • 125 gms dark cooking chocolate
  • 50 gms butter
  • 1/2 cup Best Foods™ Real Mayonnaise
  • 3 eggs
  • 1 cup caster sugar
  • 1 teaspoon vanilla essence
  • 3/4 cup flour
  • 1 1/2 tablespoons cocoa
  • 70 gms walnut pieces

Instructions

Pre-heat oven to 160 degs. Line a 30x18 cm brownie tin or similar. Combine chocolate, butter and mayonnaise and heat gently in the microwave until melted and smooth. Using an electric beater, whisk eggs, sugar and vanilla until foamy and pale. Add chocolate mixture and fold in sifted flour, cocoa and walnuts. Pour into the lined tin and bake for 20-24 minutes until just splitting on top and just set. Let cool then cut into squares and dust with icing sugar. Serve with yogurt and fresh berries.

Best Salmon Fish Cakes + Caper & Herb Mayo

Best Salmon Fish Cakes + Caper & Herb Mayo

Makes: approx 12

Ingredients

  • 100 gms smoked salmon, finely chopped
  • 2 spring onions, finely chopped
  • 1 small bunch parsley, finely chopped
  • 1/2 cup Best Foods™ Real Mayonnaise
  • 1 cup cooked mashed potato
  • 1/2 cup breadcrumbs
  • Oil for frying
  • 1 cup Best Foods™ Real Mayonnaise
  • 1 tablespoon chopped capers
  • 1 tablespoon sweet chilli sauce
  • 1 teaspoon fresh chopped dill
  • 1 lime, juice and zest

Instructions

Combine salmon, spring onions and parsley in a bowl. Add mayonnaise, potato and breadcrumbs and mash to together. Shape into medium fish cakes.

Heat oil in a shallow frying pan, cook each fish cake 2-3 minutes each side over a medium heat until golden.

Combine mayonnaise, capers, sweet chilli, lime juice and zest. Check seasoning and chill.

Serve warm fritters with summer greens and caper and herb mayonnaise. Lime wedges for squeezing.

Best Bacon & Egg Fritata

Best Bacon & Egg Fritata

Serves: 6-8

Ingredients

  • 4 potatoes (approx 900 gms)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 stalk celery, diced
  • 4 rashers streaky bacon, chopped
  • 120 gms baby spinach leaves
  • 5 eggs
  • 1/2 cup Best Foods™ Real Mayonnaise
  • 1/2 cup milk

For sweet chilli dressing combine 1/4 cup sweet chilli sauce, 1/2 cup Best Foods™ Real Mayonnaise, 2-3 tablespoons lemon juice and 1/4 teaspoon smoked paprika.

Instructions

Peel and cook potatoes in plenty of boiling salted water for 10-12 minutes until just al dente. Drain and set aside to cool. Heat oil in a large frying pan and sauté onion, celery and bacon for 3-4 minutes, add spinach and let wilt down. Beat together eggs, mayonnaise and milk. Cut potatoes into large dice and place in a bowl; add bacon mixture, beaten egg mixture, and toss gently to combine. Spoon into a lined tin approx 22cm square and bake for 25-30 minutes at 170 degs, or until set and golden. Serve with summer greens, cherry tomatoes and sweet chilli dressing.

Best Morrocan Chicken Drumstick

Serves: 6

Ingredients

  • 12 chicken drumsticks
  • 3/4 cup Best Foods™ Real Mayonnaise
  • 2 teaspoons Moroccan spice or seasoning
  • 1/2 cup breadcrumbs or panko crumbs
  • 1 teaspoon lemon zest

Instructions

Pat chicken drumsticks dry with paper towels. In a large bowl combine mayonnaise, spice, bread crumbs and zest. Toss chicken drums in spicy mayonnaise mixture and place on a lined baking dish. Bake at 175’C for 35-40 minutes until golden and crunchy.

Serve with wedges and garlic mayonnaise.

Best Classic Cheese Log

Serves: 6-8

Ingredients

  • 1/2 cup dried apricots, finely chopped
  • 1 stalk celery, finely chopped
  • 2 spring onions, finely chopped
  • 1 teaspoon crushed ginger
  • 1 tablespoon fresh chopped herbs – parsley and mint
  • 2 cups grated tasty cheese
  • 250 gms cream cheese, softened
  • 1/2 cup Best Foods™ Real Mayonnaise
  • 1 tablespoon toasted sesame seeds or black nigella seeds

Instructions

In a large bowl combine apricots, celery, spring onions and ginger, add grated cheese, softened cream cheese and mayonnaise. Blend together to create a firm spread. Shape into log or ball, cover and chill for at least 2 hours.

Serve with a sprinkle of sesame seeds, crackers and extra dried fruits.

Best Smoked Chicken Ciabatta + Basil Pesto Mayo

Best Smoked Chicken Ciabatta + Basil Pesto Mayo

Serves: 6

Ingredients

  • 2 smoked chicken breasts, sliced or shredded bite sized pieces
  • 3/4 cup Best Foods™ Real Mayonnaise
  • 1 tablespoon basil pesto
  • 1 ciabatta or flat bread loaf
  • 2 cups salad greens – mixed lettuce leaves, cucumber, red onion rings, finely sliced red cabbage, strips of coloured peppers.

Instructions

Combine smoked chicken with mayonnaise and pesto and toss to coat chicken, chill.

Cut bread in half horizontally. Spread the base with a generous layer of smoked chicken mixture, then a layer of salad ingredients then top with any remaining chicken. Place lid back on loaf and tie firmly. Chill for 1 hour to let flavours infuse and soak into bread a little. Slice into portions to serve.

Best Roasted Kumara & Cashew Salad

Serves: 4

Ingredients

  • 1 kg (4 medium) kumara
  • 2 small red onions
  • 1 red pepper
  • 2 tablespoons olive oil
  • 1 teaspoon crushed garlic
  • 1 teaspoon grated fresh ginger
  • Sea salt
  • 3/4 cup Best Foods™ Real Mayonnaise
  • 1/4 cup water
  • 1/4 cup coconut powder
  • 1 tablespoon sweet chilli sauce
  • 1 lime, juice and zest
  • Fresh coriander
  • 1/2 cup toasted cashews

Instructions

Cut vegetables into bite-sized pieces and toss together with oil, garlic, ginger and salt. Roast at 180 degs for 15-20 minutes until soft and golden, cool. For the dressing, whisk together mayonnaise, coconut powder and water until smooth, add sweet chilli and lime juice and zest. Arrange vegetables on a serving platter and drizzle with dressing, top with fresh coriander and roasted cashews.

This dish is perfect with barbequed steak or lamb rack and summer greens.

Best Lemon & Rosemary Schnitzels + Summer Salsa

Serves: 4

Ingredients

  • 2 chicken breasts
  • 1/2 cup Best Foods™ Real Mayonnaise
  • 1/4 cup milk
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh chopped rosemary
  • 1 teaspoon sea salt
  • 3 cups panko or fresh breadcrumbs
  • 2-3 tablespoons olive oil
  • 1 firm ripe avocado
  • 1/2 red onion
  • 1/4 telegraph cucumber
  • 2 tablespoons lemon juice
  • 2 tablespoons sweet chilli sauce

Instructions

Cut chicken breasts into thick schnitzels. Combine mayonnaise, milk, lemon zest and rosemary and marinate chicken for at least 30 minutes. Combine salt and panko crumbs in a large bowl. Heat oil in a shallow pan, coat marinated chicken in crumbs and pan fry until golden and cooked through. For the salsa, dice avocado, onion and cucumber and toss with lemon juice and sweet chilli, season to taste.

Serve with fresh or grilled vine tomatoes and rocket salad.

Best Chicken Skewers + Smoked Paprika Mayo

Serves: 4

Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon celery seed
  • 1 tablespoon sesame seeds
  • 1 teaspoon sea salt
  • 1 cup Best Foods™ Real Mayonnaise
  • 1 teaspoon smoked paprika
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon lemon juice
  • 8 bamboo skewers (soaked in cold water for 10 minutes)

Instructions

Pre-heat grill pan or BBQ. Cut chicken into thin strips and toss with oil, celery seed, sesame seed and salt. Thread onto skewers. BBQ or grill until golden and cooked through.

For the sauce, whisk mayonnaise, paprika, thyme and lemon juice, and season to taste.

Serve with crisp salad greens or steamed greens and crusty bread.

Best BBQ Coleslaw

Best BBQ Coleslaw

Serves: 4

Ingredients

  • 1/2 red cabbage, finely sliced
  • 1/2 green cabbage, finely sliced
  • 2 stalks celery, finely sliced
  • 1 carrot, peeled and cut into fine strips
  • 1 red apple, cut into fine wedges
  • 2 tablespoons lemon juice
  • 3/4 cup Best Foods™ Real Mayonnaise
  • 1/4 cup water
  • 1 teaspoon whole grain mustard
  • 1 tablespoon chopped Italian parsley
  • 1/4 cup toasted walnuts

Instructions

In a large bowl place red and green cabbage, celery, carrot and apple. Sprinkle with lemon juice and toss to combine. Whisk mayonnaise, water and mustard and season to taste. Toss vegetables and mayonnaise together and top with parsley and walnuts.

Serve with BBQ meats or perfect in homemade burgers!

Best BBQ Ribs

Best BBQ Ribs

Serves: 4

Ingredients

  • 1 kg pork ribs
  • 1 litre water
  • 1 bay leaf
  • 2 tablespoons brown sugar
  • 2 strips orange peel
  • 1 cup Best Foods™ Real Mayonnaise
  • 1/2 cup char siu sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon grated ginger
  • 1 teaspoon crushed garlic
  • 1/2 teaspoon mixed spice

Instructions

Pre-heat oven to 190 degs. Place ribs in a large roasting pan. Combine water, bay leaf, orange peel and brown sugar and pour over ribs, cover with foil or lid. Bake for 1 hour, remove foil, drain off liquid and let cool. Combine mayonnaise and remaining ingredients. Pre-heat barbeque or oven. Brush ribs generously with sauce and BBQ or roast in the oven until sticky and golden about 15-20 minutes.

This dish is delicious sticky finger fun for kids and adults! Serve with baked potatoes and a simple salad.

Best Summer Caesar Salad

Best Summer Caesar Salad

Serves: 4

Ingredients

  • 1 tablespoon olive oil
  • 4 rashers streaky bacon, cut in half
  • 8 slices French bread
  • 1/2 cup Best Foods™ Real Mayonnaise
  • 2 teaspoons Worcestershire sauce
  • 1 clove garlic, crushed
  • 2-3 anchovies, finely chopped
  • Squeeze lemon juice
  • Cos lettuce leaves
  • 4 soft boiled eggs
  • Shaved parmesan, Italian parsley, black pepper

Instructions

Heat oil in a shallow pan and fry bacon until crispy, remove from pan and drain on paper towels, using the bacon oil, fry the bread slices on both sides until golden, drain on paper towels. Whisk together mayonnaise, Worcestershire sauce, garlic, anchovies and lemon juice to taste. Place cos in a large bowl and toss with mayonnaise to coat leaves. Arrange cos leaves on a serving platter or individual bowls and top with bacon strips, halved eggs, croutons, and parmesan cheese. Garnish with Italian parsley and black pepper.

This salad is the perfect lunch, or add grilled chicken strips for dinner! Omit the bacon and try it with pan-seared salmon.

Best Chocolate Devil's Cake

Best Chocolate Devil's Cake

Serves: 8-10

Ingredients

  • 1 ¾ cups self-raising flour
  • 1 ¾ cups sugar
  • ¾ cup cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 egg
  • 1 cup Best Foods™ Mayonnaise
  • 1 teaspoon vanilla
  • 1 ½ cups milk

Instructions

Pre-heat oven to 175 degs. Sift flour, cocoa, baking soda and baking powder into a large mixing bowl and stir in sugar. Add egg, mayonnaise, vanilla and milk and beat together on low speed until combined, increase speed and beat at medium for 2 minutes. Pour into a lined 23cm cake tin and bake for 40-45 minutes or until a skewer inserted into the centre of the cake comes out with a small amount of fudgy mixture.

To make chocolate ganache icing melt together 150 gms dark chocolate with ¼ cup cream and 30 gms butter until smooth and dark. Let cool then spread onto cake. Serve with summer berries, cream and extra chocolate sauce.

Best Little Golden Carrot Cakes

Best Little Golden Carrot Cakes

Makes about 20 little cakes

Ingredients

  • 2 cups self-raising flour
  • 1½ cups sugar
  • 1 teaspoon mixed spice
  • 2 cups grated carrot
  • 1 cup Best Foods™ Olive Oil Mayonnaise
  • 2 eggs
  • 1 x tin (234gms- about 1 cup) crushed pineapple in juice.
  • 1 teaspoon vanilla essence

Instructions

Pre-heat oven to 175 degs. Combine flour, sugar, spice and carrot in a large bowl. In another bowl beat together mayonnaise, eggs, vanilla and stir in pineapple. Fold the two mixtures together lightly but thoroughly and spoon into paper cases. Bake for 15-20 minutes until puffed and golden.

For cream cheese frosting beat together 250 gms softened cream cheese, 30 gms soft butter and about 1-1 ½ cups icing sugar until smooth, fluffy and spoonable. Pipe or spoon onto cooled cakes and decorate with chopped dried apricots, pumpkin seeds, flaked almonds and sunflower seeds.

Best Chicken Satay Nibbles

Serves: 4

Ingredients

  • ½ cup Best Foods™ Mayonnaise
  • 2 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 teaspoon crushed ginger
  • 1 teaspoon crushed garlic
  • ½ teaspoon chilli paste
  • 500-600 gms chicken nibbles
  • ¼ cup chopped cashews

Instructions

Combine first 6 ingredients and blend to a smooth paste; add chicken nibbles and toss to completely coat. Marinate for at least 2 hours or over night. Pre-heat oven to 175 degs. Line a baking tray with cooking paper and arrange nibbles in a single layer. Cook for 30-35 minutes or until golden and cooked through. Arrange cooked nibbles on a serving plate and sprinkle with the chopped nuts.

Serve with summer salad and new potatoes.

For a quick and easy dipping sauce combine ½ cup Best Foods Mayo, 2 tablespoons sweet chilli sauce, 1 tablespoon soy sauce and 1 tablespoon crushed peanuts. Add chopped parsley or coriander for colour if you like.

Best Grilled Garlic & Herb Crumb Mussels

Best Grilled Garlic & Herb Crumb Mussels

Serves: 24

Ingredients

  • 24 mussels – steamed and arranged on the half shell.
  • 1 cup Best Foods™ Olive Oil Mayonnaise
  • 3 slices bread
  • 2 cloves garlic
  • 1 teaspoon celery salt
  • Small handful parsley, rosemary or dill
  • Olive oil spray
  • Lemon wedges

Instructions

Pre-heat oven to grill setting. Arrange the mussels on a lined baking tray. Place a teaspoon of mayonnaise on each mussel and spread to cover. Whizz together the bread, garlic, salt and herbs until coarse breadcrumbs. Sprinkle a generous amount of crumbs over mayonnaise and grill for 2-3 minutes until golden and bubbling.

Serve with lemon wedges for squeezing.

Best Thai Fish Bites

Serves: 26-30

Ingredients

  • 300 gms white fish
  • 1 teaspoon green curry paste
  • 1 teaspoon crushed ginger
  • 1 teaspoon crushed garlic
  • 1 teaspoon finely chopped lemongrass or lemon zest
  • 2 eggs
  • ¼ cup Best Foods™ Olive Oil Mayonnaise
  • 3/4 cup fresh breadcrumbs
  • Oil for frying
  • 1 cup Best Foods™ Olive Oil Mayonnaise
  • 1 lemon juice and zest
  • 1 tablespoon chopped coriander.

Instructions

In the food processor combine fish, curry paste, ginger and garlic and blend until finely chopped. Add lemongrass, eggs, mayonnaise and breadcrumbs and pulse until well combined. Heat oil in a heavy based frying pan and add teaspoonfuls of mixture, smooth into rounded shapes. Cook 2-3 minutes each side over a medium heat until golden and puffed. Drain on paper towels. Arrange on a serving platter and serve with the lemon herb dip.

For dip combine mayonnaise, lemon juice and zest and chopped coriander.

Best Seafood Pasta Salad

Best Seafood Pasta Salad

Serves: 4-6

Ingredients

  • 250 gms penne pasta
  • 1 cup Best Foods™ Olive Oil Mayonnaise
  • ¼ cup tomato sauce
  • 1 tablespoon sweet chilli sauce
  • 1 tablespoon Worcestershire sauce
  • Sea salt & cracked pepper
  • 1 cup surimi broken into bite-sized pieces
  • 1 cup cooked shrimps

Instructions

Cook pasta until al dente and refresh under cold running water. Combine mayonnaise, tomato sauce, sweet chilli and Worcestershire sauce and season well. In a large bowl combine pasta, mayonnaise mix and seafood, toss to evenly coat all ingredients. Chill until serving. Serve with lime wedges and summer greens on the side.

Best Cheese & Smoky Ham Scones

Makes about 12-14

Ingredients

  • 3 cups flour
  • 4 teaspoons baking powder
  • ½ teaspoon soda
  • ½ teaspoon celery salt or your favourite seasoning
  • 1½ cups grated cheddar cheese
  • ½ cup diced smoky ham
  • 2 tablespoons fresh chopped parsley
  • 1 spring onion, finely chopped
  • 1½ cups milk
  • 1 cup Best Foods™ Real Mayonnaise
  • Sprinkle of smoked paprika

Instructions

Pre-heat oven to 190 degs. Line a baking tray with cooking paper. Sift flour, baking powder, soda and salt into a large bowl. Stir in cheese, ham, parsley and spring onion. In a separate bowl beat together the milk and mayonnaise. Fold the liquid ingredients into the dry and gently mix until combined (add a little extra milk if needed). The mixture should be a stiff muffin consistency. Use a large spoon to scoop out generous spoonfuls onto the lined tray – they should just be touching so when cooked they will link together. Sprinkle with a little paprika and bake for 10-15 minutes until golden and risen (you can pull the middle one apart slightly to check it is cooked through). Remove from the oven and cover with a clean tea towel. Serve warm with butter.

Best Oaty Nut Slice

Ingredients

  • 100 gms butter, melted
  • 1 cup brown sugar
  • ½ cup Best Foods™ Real Mayonnaise
  • 2 and ¼ cups rolled oats
  • 1 cup coconut
  • 1 cup diced apricots
  • ½ cup dried cranberries
  • ½ cup chopped nuts – pistachios, pecans, almonds, walnuts etc
  • ½ cup flour

Instructions

Pre-heat oven to 165 degs. Line a slice tray or glass dish approx. 19x30 cm with cooking paper. Whisk together butter, brown sugar and mayonnaise. In a large bowl combine together rolled oats, coconut, diced apricots, cranberries, nuts and flour. Stir the mayonnaise mixture into the oats and blend well. Press into the slice tin and smooth over with the back of a spoon, pressing in well. Bake for 20-25 minutes until golden. Leave to set then slice with a serrated knife. Store in an air-tight container.

Best Lite Mayo Salmon + Asian Style Slaw & Toasted Sesame

Best Lite Mayo Salmon + Asian Style Slaw & Toasted Sesame

Serves: 4

Ingredients

  • 4 X 180 gms portions of fresh salmon (*you could use thick white fish if you prefer)
  • 4 tablespoons miso soup paste
  • ½ cup Best Foods™ Lite Mayonnaise
  • 1 teaspoon finely grated lemon zest
  • ¾ cup panko breadcrumbs
  • ½ red cabbage, finely sliced
  • 1 carrot, peeled and finely sliced
  • 1 yellow capsicum, deseeded and sliced into strips
  • ½ cup sango sprouts
  • 1 cup mesclun salad mix
  • 2 tablespoons coriander + extra for garnish
  • ¼ cup Best Foods™ Lite Mayonnaise
  • 1 lime, juice and zest
  • 1 tablespoon sweet chilli sauce
  • 2-3 tablespoons warm water
  • 2-3 tablespoons toasted sesame seeds (you can use a mixture of black and natural seeds)

Instructions

Pre-heat the oven to 180 degs. Line a shallow roasting tray with cooking paper. In a small bowl combine miso, mayonnaise and lemon zest. Arrange salmon portions in the tray and spread a generous layer of miso mayonnaise on each. Sprinkle over panko crumbs. Bake in the oven for 8-10 minutes depending on thickness of the salmon (the flesh should just start to flake in the centre when tested with a fork). Rest for 2-3 minutes. Meanwhile combine the sliced vegetables and sprouts in a large bowl and toss with the lime mayonnaise dressing. Arrange coleslaw on the serving plates and top each with a portion of salmon, sprinkle with sesame seeds and garnish with coriander and a lime wedge.

For dressing, whisk together the mayonnaise, lime juice and zest, sweet chilli and warm water to make a thin creamy dressing.

Best Simple Speedy Lasagna

Serves: 6

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 1 teaspoon crushed garlic
  • 1 kg lean beef mince
  • 2 x 400 gms diced tinned tomatoes
  • 2 teaspoons beef stock powder
  • 140 gms tomato paste (about ½ cup)
  • 2 tablespoons sweet chilli sauce
  • 1 teaspoon mixed herbs
  • 2 teaspoons corn flour +
  • 2 tablespoons water
  • 250 gms San Remo Large Instant Lasagna Sheets  
  • 250 gms sour cream
  • ¾ cup Best Foods™ Real Mayonnaise
  • 2 eggs
  • ¼ cup grated cheese
  • 1 teaspoon chopped fresh Italian Parsley
  • Cracked pepper

Instructions

Heat oil in a large saucepan or frying pan and sauté onion, garlic and mince until lightly browned. Add tomatoes, stock powder, sweet chilli sauce, herbs and paste and simmer for 15-20 minutes until it forms a sauce consistency – thicken with combined corn flour and water if the mince is quite liquid, simmering for a further 2-3 minutes. Whisk together the sour cream, mayonnaise and eggs.

Pre-heat oven to 175 degrees. Arrange half the mince in the base of the lasagna dish (approx. 19x30cm) then top with a layer of lasagna sheets. Cover with half the mayonnaise mixture and repeat the layers, finishing with the mayonnaise mixture. Sprinkle over the cheese and bake for 40-45 minutes until golden and the pasta sheets are tender.

Sprinkle with chopped parsley and cracked pepper. Serve with salad.

Ingredients

  • 3-4 squid tubes
  • ½ cup plain flour + extra for dusting
  • ¼ cup Best Foods™ Olive Oil Mayonnaise
  • 2 tablespoons water
  • 1 tablespoon lemon pepper
  • ½ teaspoon flaky sea salt
  • 1 cup Best Foods™ Olive Oil Mayonnaise
  • 2 limes, juice and zest
  • 1 tablespoon chopped fresh dill
  • Oil for frying

Instructions

Rinse squid tubes and slice into fine rings about 5 mm wide, dry off on paper towels. Whisk together flour, mayonnaise, water, lemon pepper and salt to make a thin batter. Heat 2-3 inches of oil in a saucepan until medium-hot. Toss a few squid rings at a time in a small bowl of extra flour to give them a light dusting. Then dip into the batter, drain off excess and fry 1-2 minutes until golden. Drain on paper towels. Cook in batches so the oil stays hot. Serve with delicious zesty dip and lime halves for squeezing.

For dip, combine mayonnaise, lime juice, zest and fresh dill. Season to taste and chill until required.

  • 2 large chicken breasts

Instructions

Slice chicken into bite-sized strips and toss with spice and oil - allow to marinate for at least 30 minutes. Then chargrill on a pre-heated BBQ or in a grill pan until golden, striped and cooked through. To assemble, spread half the wrap with avocado mix, top with butter-crunch lettuce leaves and top with chargrilled Cajun chicken.   • 1 whole free range chicken
  • ½ cup Best Foods™ Mayonnaise
  • 1 tablespoon lemon zest
  • 1 teaspoon Moroccan spice
  • 1 tablespoon fresh chopped mint
  • 2 cloves garlic, crushed
  • Spray oil
  • 1 teaspoon Moroccan spice
  • 1 tablespoon honey
  • 1 teaspoon sea salt
  • 1 lemon cut into 4 wedges

Instructions

To prepare the chicken cut down the breast bone to flatten out the chicken. Arrange the chicken on a large piece of tin foil, skin side up. In a small bowl combine the mayonnaise, zest, Moroccan spice, mint and garlic. Carefully prise the skin away from the chicken flesh and spoon the mayonnaise marinade up under the skin so it creates a layer between the flesh and skin - this will help the chicken stay moist and flavoursome. Spray the chicken with the oil and rub the spice, honey and salt all over the outer skin. Place tin foil and chicken on the hot plate and curve foil up to create a dish for the juices. Arrange the lemon wedges around the chicken and barbeque for about 30 minutes at a medium heat, until golden and the juices run clear. Rest for 5 minutes before carving.

Ingredients

  • 30 gms butter
  • 1 small leek or onion, finely sliced
  • 1 stalk celery, diced

  • ¼ cup flour
  • 2 cups hot milk
  • 1 x 450 gms tin Sealord smoked flavoured fish
  • 3 boiled eggs, peeled and sliced

  • 6 medium Agria potatoes, peeled and chopped
  • ½ cup tasty cheese

Instructions

Pre-heat the oven to 180 degs. In a large saucepan melt the butter and sauté the leek, celery, garlic and ginger for 3-4 minutes until softened and fragrant. Add flour and cook for 2-3 minutes until pale golden, gradually add hot milk stirring until thick and creamy. Add drained roughly flaked smoked fish and simmer for 5 minutes. Remove from the heat and fold in boiled egg and mayonnaise. Spoon mixture into individual serving pots or one large serving dish. Meanwhile cook potatoes in plenty of boiling salted water for approx. 20 minutes or until soft. Drain well and add half the cheese and the mayonnaise. Spoon mash onto smoked fish mixture and sprinkle over remaining cheese. Bake for 15-20 minutes until bubbling and golden. Serve with cracked pepper, chopped parsley with lemon wedges.

  • 300 gms rare Quality Mark roasted beef, sliced

Ingredients

  • 4 large baking potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon all-purpose seasoning or sea salt

  • ½ cup grated tasty cheese
  • ½ cup diced cooked bacon
  • 1 avocado
  • ½ cup sour cream

Instructions

Pre-heat oven to 170 degs. Rub potatoes in oil and seasoning and place on a tray in the oven - bake for 40-50 minutes until soft. Remove from the oven and let cool for 10 minutes. Cut the top from the potatoes and scoop out ¾ of the filling into a large bowl. Add cheese, mayonnaise and bacon to the potato flesh and mash together. Spoon the filling back into the potato cases and heat for 10 minutes. To serve, top potatoes with avocado slices and combined sour cream and mayonnaise.   • 16 Quality Mark mini lamb cutlets
  • ½ cup Best Foods™ Real Mayonnaise

  • Black pepper
  • 2 cups fresh bread crumbs or panko crumbs
  • ½ cup pine nuts, roughly chopped

  • Mint jelly to serve

Instructions

Pre-heat the oven to 190 degs. In a bowl combine mayonnaise, mint, garlic and pepper. Marinate lamb cutlets in the minted mayonnaise for at least 30 minutes. Combine the breadcrumbs, pine nuts and salt. Brush off excess mayonnaise and coat each cutlet in the pine nut crumbs. Heat half the oil in a frying pan and cook half the lamb for 1-2 minutes each side, then repeat with remaining oil and lamb, then place on a lined tray. Cook for 6-8 minutes until golden. Serve with mint jelly and colourful salad.

  • 2 ½ cups self-raising flour
  • 1 level teaspoon baking soda

  • 40 gms butter
  • ¾ cup icing sugar
  • ½ cup passionfruit syrup

Instructions

Pre-heat the oven to 170 degs. Line a 23cm spring form cake tin with baking paper. In a large bowl, sift flour, soda and spice, stir in coconut and sugar. In a separate bowl mash together bananas, mayonnaise, vanilla, pineapple and milk. Fold the wet ingredients into the dry and mix well. Pour into the prepared tin and bake for 45-55 minutes until golden and a skewer is removed cleanly.

Allow to cool before icing with passion fruit frosting.

For frosting, soften butter and cream cheese and beat until smooth. Add 2 tablespoons passionfruit syrup and icing sugar and beat a further 1-2 minutes until fluffy and spreadable. Chill until ready to serve.

Drizzle with remaining passionfruit and garnish with toasted flaked coconut
