BBQ Meatball sliders with Summer Slaw
Serves 6 / makes about 12 mini meatballs
Ingredients
Meatball Sliders
- 500 gms prime mince, pork mince, or chicken mince
- 1 small onion, finely diced
- ¼ cup Best Foods™ Mayonnaise
- ½ teaspoon each of smoked paprika, mixed herbs and Cajun spice
- 1 egg
- 2-3 tablespoons panko crumbs
- Sea salt & cracked pepper
- Toasted mini buns/sliders
BBQ Mayonnaise
- ¼ cup BBQ sauce
- ¼ cup Best Foods™ Mayonnaise
Summer Slaw
- 3 cups finely sliced coleslaw mix of red and green cabbage, grated carrot and thin coloured pepper strips
- ¼ cup Best Foods™ Mayonnaise
- Lemon juice
- ½ teaspoon celery salt.
Method
Preparation time: 15 minutes
Cook time: 15 minutes
- Combine mince, onion, mayonnaise, herbs and spices, egg, panko and seasoning. Mix well and shape into small patties. Chill until ready to BBQ.
- Take the sliced coleslaw mix and combine with Best Foods™ Mayonnaise, a good squeeze of lemon juice and the celery salt. Mix and chill until ready.
- Combine the BBQ sauce and mayonnaise and set aside.
- Cook the little patties for 2-3 minutes each side on a pre-heat BBQ grill and sandwich between slider buns with coleslaw and a dollop of BBQ mayonnaise.
