BBQ Vege Salad with Smoked Pepper Dressing

Serves 6
Ingredients
  • Quick cooking vegetables such as zucchini, coloured peppers, kumara, baby carrots, red onion, eggplant
  • 2-3 tbsp. olive oil
  • Salt

Smoked Pepper Dressing

  • 1 roasted skinned red pepper
  • 1 cup Best Foods™ Mayonnaise
  • 1 tsp. smoked paprika
  • Lemon zest and juice
  • Sea salt & cracked pepper
Method

Preparation time: 15 minutes

Cook time: 20-30 minutes

  1. Cut the quick cooking vegetables into bite sized pieces.
  2. Toss with the olive oil and season with salt.
