BBQ Vege Salad with Smoked Pepper Dressing
Serves 6
Ingredients
- Quick cooking vegetables such as zucchini, coloured peppers, kumara, baby carrots, red onion, eggplant
- 2-3 tbsp. olive oil
- Salt
Smoked Pepper Dressing
- 1 roasted skinned red pepper
- 1 cup Best Foods™ Mayonnaise
- 1 tsp. smoked paprika
- Lemon zest and juice
- Sea salt & cracked pepper
Method
Preparation time: 15 minutes
Cook time: 20-30 minutes
- Cut the quick cooking vegetables into bite sized pieces.
- Toss with the olive oil and season with salt.
