Best Baked Potatoes with Cheese and Bacon

Serves 4
  • 4 large baking potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon all-purpose seasoning or sea salt
  • ¼ cup Best Foods™ Real Mayonnaise
  • ½ cup grated tasty cheese
  • ½ cup diced cooked bacon
  • 1 avocado
  • ½ cup sour cream
  • ¼ cup Best Foods™ Real Mayonnaise
  • Sweet chili sauce
  • Sliced spring onion


Preparation time: 15 minutes

Cook time: 50 minutes

  1. Preheat oven to 170 degrees. Rub potatoes in oil and seasoning and place on a tray in the oven bake for 40-50 minutes until soft. Remove from the oven and let cool for 10 minutes. 
  2. Cut the top from the potatoes and scoop out ¾ of the filling into a large bowl. Add cheese, mayonnaise and bacon to the potato flesh and mash together. 
  3. Spoon the filling back into the potato cases and heat for 10 minutes.
  4. To serve, top potatoes with avocado slices and combined sour cream and mayonnaise. Drizzle each with sweet chili sauce and sprinkle with spring onions.
