Best Baked Potatoes with Cheese and Bacon
Serves 4
Ingredients
- 4 large baking potatoes
- 2 tablespoons olive oil
- 1 teaspoon all-purpose seasoning or sea salt
- ¼ cup Best Foods™ Real Mayonnaise
- ½ cup grated tasty cheese
- ½ cup diced cooked bacon
- 1 avocado
- ½ cup sour cream
- ¼ cup Best Foods™ Real Mayonnaise
- Sweet chili sauce
- Sliced spring onion
Method
Preparation time: 15 minutes
Cook time: 50 minutes
- Preheat oven to 170 degrees. Rub potatoes in oil and seasoning and place on a tray in the oven bake for 40-50 minutes until soft. Remove from the oven and let cool for 10 minutes.
- Cut the top from the potatoes and scoop out ¾ of the filling into a large bowl. Add cheese, mayonnaise and bacon to the potato flesh and mash together.
- Spoon the filling back into the potato cases and heat for 10 minutes.
- To serve, top potatoes with avocado slices and combined sour cream and mayonnaise. Drizzle each with sweet chili sauce and sprinkle with spring onions.
