Best Ever BBQ Chicken with Moroccan Spice

Ingredients
- 1 whole free range chicken
- ½ cup Best Foods™ Mayonnaise
- 1 tablespoon lemon zest
- 1 teaspoon Moroccan spice
- 1 tablespoon fresh chopped mint
- 2 cloves garlic, crushed
- Spray oil
- 1 teaspoon Moroccan spice
- 1 tablespoon honey
- 1 teaspoon sea salt
- 1 lemon cut into 4 wedges
Method
Preparation time: 15-20minutes
Cook time: 30-40 minutes
- To prepare the chicken cut down the breast bone to flatten out the chicken. Arrange the chicken on a large piece of tin foil, skin side up.
- In a small bowl combine the mayonnaise, zest, Moroccan spice, mint and garlic.
- Carefully prise the skin away from the chicken flesh and spoon the mayonnaise marinade up under the skin so it creates a layer between the flesh and skin this will help the chicken stay moist and flavoursome.
- Spray the chicken with the oil and rub the spice, honey and salt all over the outer skin.
- Place tin foil and chicken on the hot plate and curve foil up to create a dish for the juices.
- Arrange the lemon wedges around the chicken and barbeque for about 30 minutes at a medium heat, until golden and the juices run clear. Rest for 5 minutes before carving.
