Best Thai Beef Noodle Salad with Coconut Lime and Chili Mayonnaise

Serves 4
Ingredients
  • 300 grams rare roasted beef, sliced
  • 150 grams rice stick noodles
  • 1 cup rocket leaves
  • ½ cucumber, sliced
  • ½ red onion, finely sliced
  • 1 carrot, thinly sliced
  • ¼ cup chopped coriander
  • 1 cup cherry tomato quarters
  • 1 tbsp. sesame seeds
  • ½ cup Best Foods™ Lite Mayonnaise
  • ½ cup coconut milk
  • 1 lime – juice and zest
  • 1 red chili, finely sliced, or to taste
  • Sea salt
Method

Preparation time: 15-20 minutes

Cook time: 15 minutes

  1. In a large bowl combine drained softened noodles, rocket, cucumber, onion, carrot and cherry tomatoes. 
  2. Combine the dressing ingredients in a jar and shake well.
  3. Toss the salad with half the dressing, sesame seeds and coriander.
  4. Arrange salad in shallow bowls or noodle boxes and top with sliced beef, drizzle with remaining dressing.
