Best Thai Beef Noodle Salad with Coconut Lime and Chili Mayonnaise
Serves 4
Ingredients
- 300 grams rare roasted beef, sliced
- 150 grams rice stick noodles
- 1 cup rocket leaves
- ½ cucumber, sliced
- ½ red onion, finely sliced
- 1 carrot, thinly sliced
- ¼ cup chopped coriander
- 1 cup cherry tomato quarters
- 1 tbsp. sesame seeds
- ½ cup Best Foods™ Lite Mayonnaise
- ½ cup coconut milk
- 1 lime – juice and zest
- 1 red chili, finely sliced, or to taste
- Sea salt
Method
Preparation time: 15-20 minutes
Cook time: 15 minutes
- In a large bowl combine drained softened noodles, rocket, cucumber, onion, carrot and cherry tomatoes.
- Combine the dressing ingredients in a jar and shake well.
- Toss the salad with half the dressing, sesame seeds and coriander.
- Arrange salad in shallow bowls or noodle boxes and top with sliced beef, drizzle with remaining dressing.
