Chilli Mayo and Black Bean Vegetarian Mini Sliders

Serves 16 sliders
Ingredients

For the patties:

  • 2 400g can black beans, drained and rinsed
  • 2 eggs
  • 1 onion finely diced
  • 2 garlic cloves finely minced
  • 3 cups bread crumbs
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil

For the sliders:

  • 16 slider buns or dinner rolls
  • Best Foods ™ Mayonnaise with a Spark of Chilli
  • Sauerkraut
  • Lettuce
  • Mini skewers
Method
  1. Sauté the onion and garlic in a large frying pan until the onion is translucent and cooked
  2. Place the black beans into a large bowl and mash with a fork or potato masher. Add egg, bread crumbs, Cajun seasoning, salt and pepper, garlic and onion and mix well.
  3. Your mix should be a cookie dough consistency.  Form the mixture into mini patties – about 2 tablespoons per patty, by rolling the mixture into a ball, packing together firmly, then flattening slightly. Place them on a lined tray and repeat the process with the remainder of the mixture
  4. Add some cooking oil to a large sauté pan over medium heat. Working in batches, cook one side until browned – about 3-5 minutes per side, then carefully flip and cook the other side until browned and cooked through. Place the patties on a paper-towel-lined plate to drain any excess oil and cool slightly
  5. To assemble the sliders place the open slider buns on a large tray or chopping board, add a dollop of Best Foods™ Mayonnaise with a Spark of Chilli on the bottom bun, add lettuce, a patty, another squirt of mayo and some sauerkraut, then secure with a skewer. Serve immediately.
