1. Pre-heat the oven to 190 degrees and line a roasting tray with baking paper.
2. Combine the breadcrumbs, onion, herbs, garlic, egg and mayonnaise and mix well.
3. Stuff the chicken with the savoury breadcrumb mixture and tie the legs together with kitchen string, place in the lined roasting dish.
4. Arrange the baby potatoes around the chicken, spray with oil and season.
5. Bake for 50-60 minutes or until cooked through and golden.
