Classic Mussel Fritters with Mayo and Avocado Sauce

Serves 6, makes 10-12


  • 12 cooked mussels removed from shells
  • 1 ½ cup corn kernels canned or fresh
  • 1/2 cup water
  • ½ red onion diced
  • 2 eggs, beaten 
  • 3 tbsp Best Foods™ Mayonnaise
  • 1 cup self-raising flour
  • 1 tsp. baking powder
  • 1 tsp. Cajun seasoning
  • salt to season
  • 1/4 cup oil
  • Coriander chilli and spring onions to garnish


Mayonnaise and Avocado sauce

  • ½ cup Best Foods™ Mayonnaise
  • ½ avocado
  • 1 garlic clove
  • 2 tbsp coriander
  • Salt to season 


  1. Add eggs, flour, Cajun seasoning and salt to make a soft batter
  2. Dice the mussel meat and add into the batter with the corn and onion
  3. Heat the oil in a shallow frying pan. Place tablespoons of the mixture in the oil and fry the fritters for 2-3 minutes on each side until they are golden and cooked through. Drain on paper towels
  4. To make the avocado sauce, mash the avocado in a bowl, stir through the Best Foods™ Mayonnaise, garlic and coriander and serve it with the fritters and fresh parsley and sliced spring onion

Try adding a mixture of other seafood, such as crab meat, prawns or shrimp to this recipe. You can also replace the canned sweet corn with fresh sweet corn, cut from the cob.
