Easy Quesadilla

Serves 4
  • 4 Farrah Wraps red pepper
  • 1 cup grated cheese
  • ½ cup Best Foods™ Mayonnaise
  • 1 cup sweet corn kernels
  • 4-8 slices sandwich ham
  • 1 large tomato, diced
  • ½ red onion, diced
  • ¼ cucumber, diced
  • 1 tbsp. chopped parsley or herbs
  • 1 tbsp. sweet chili sauce
  • 2 tbsp. olive oil 

Preparation time: 5 minutes

Cooking time: 5-10 minutes

  1. Pre-heat a sandwich press or frying pan.
  2. Mix together the grated cheese, Best Foods™ Mayonnaise and sweet corn and spread generously over half of each of the wraps.
  3. Top with the sliced ham and fold the wrap over to enclose the filling making a semi-circle.
  4. Spray the press plate with a little oil and cook the wraps for 2-3 minutes each side or until golden and bubbling.
  5. Cut into wedges to serve.
  6. For the salsa, combine the tomato, onion, cucumber and herbs and mix with the sweet chili sauce and olive oil, season to taste and serve alongside the toasted wraps with a few rocket leaves.
