Grilled Mixed Veggie BBQ Platter

Serves 6
Ingredients

Glaze:

  • ½ cup olive oil
  • 4 tbsp malt vinegar
  • 4 tbsp soy sauce
  • 2 tbsp honey

 

Seasonal vegetables:

  • 3 corn
  • 1 cauliflower
  • 2 red onions quartered
  • 1 pack fresh mini carrots
  • 3 large capsicum
  • Best Foods ™  Mayonnaise
Method
  1. Preheat oven on bake at 180 degrees. In a medium bowl add all the glaze ingredients and stir to combine. Cover and set aside
  2. Wash, cut and prepare all vegetables. You can keep the carrots fresh and uncooked
  3. Line a large baking tray with baking paper. Place the corn on the tray and baste with a good coating of the glaze and bake in the oven for 20 - 25 minutes or until tender and cooked
  4. Add the cauliflower on the same tray and baste with the glaze, continue cooking together until tender. Every 5 minutes rotate the veggies and baste with the glaze
  5. Baste the remainder of the veggies with a good coating of the glaze. Heat a large sauté pan on medium heat and cook each type of veg (red onions and capsicum) in batches for 5-7minutes until tender. Remember to turn them to cook both sides
  6. Once cooked arrange all the veggies on a large platter or tray. Drizzle any remaining glaze over the cooked veggies. Top the veggies with a selection of crunchy nuts and seeds and add a bowl of Best Foods  Mayonnaise as a dipping sauce. Serve and enjoy.
