Kumara and Chickpea Veggie Burger

Serves 6-8 large patties
  • 1 large onion, finely diced
  • 8 burger buns
  • Oil to cook
  • Salt and pepper to season
  • 2 tbsp Best Foods™ Mayonnaise
  • 2 cup breadcrumbs
  • 2 cup canned chickpeas drained
  • 1 cup mashed kumara
  • 2 tbsp balsamic vinegar

  • Baby spinach
  • Grilled capsicum
  • Tomato sliced
  • Cucumber ribbons

  1. Saute the onion and garlic in a large pan on a medium heat
  2. Drain the chickpeas and mash them in a large bowl until you get a chunky texture. Mix through the remainder patty ingredients and season to taste
  3. Divide the mixture, shape into burger patties and coat with bread crumbs so you get a crunchy patty. Place on a tray lined with baking paper and freeze for at least 30 minutes
  4. Heat a large pan on medium heat, add your patties and cook for 3-5 minutes on each side or until the patty is golden and crunchy. Remove from the heat and allow to cool for 5 minutes
  5. Build your burger by adding your fresh veggies, top with a golden veggie patty and add a dollop of Best Foods™ Mayonnaise and enjoy
