Mini Vegetable Frittata Nests

Serves 10-12
  • 2 cups pre-cooked vegetables such as diced kumara, broccoli, potato
  • Fresh vegetables such as coloured peppers, chopped vine tomatoes, spring onions, peas
  • 5 eggs
  • ¾ cup Best Foods™ Mayonnaise
  • ¼ cup milk or cream
  • Salt and fresh herbs to season 

Preparation Time: 15 minutes

Cook Time: 15-20 minutes

Combine pre-cooked vegetables with a few fresh vegetables.

Spoon into small lightly greased dishes or a greased muffin tray.

Beat 5 eggs with the Best Foods™ Mayonnaise and milk or cream. Season with salt and fresh herbs if desired.

Pour the egg and mayonnaise mixture over the vegetables until nearly covered and bake at 180 degrees for about 15-20 minutes until golden and set.

Let cool for five minutes then remove from the tins and serve warm. 

Mini Vegetable Frittata Nests

You can also make this in one family sized dish for a side dish or for a picnic or lunch dish with salad and chutney on the side.
