Rare Roasted Beef with Horseradish Mayonnaise & Pretty Pickles Crostini

Ingredients
- 1 Sour Dough baguette
- Olive oil
- 1 clove garlic, crushed
- 500 g piece beef fillet
- 1 teaspoon spice rub – Italian or similar
- 1 cup Best Foods Mayonnaise
- 2 tablespoons freshly grated horseradish or paste
- 1 red onion, very finely sliced
- ½ cup white wine vinegar
- 2 tablespoons caster sugar
- Micro greens to serve
Method
- Pre-heat the oven to 185 degrees, rub the beef fillet in the spice rub and allow to marinate for at least 30 minutes.
- Sear the beef in an oiled frying pan until caramelised on all sides, then transfer to a roasting dish and cook for 12-15 minutes until cooked medium rare or to your liking. Rest the meat for at least 10 minutes before slicing thinly.

- Slice the Sour Dough baguette into 8-10 mm thick rounds and arrange in a single layer on a lined baking tray.
- Combine the olive oil and garlic and generously brush each bread round with the flavoured oil. Toast in the oven for 5-8 minutes until golden.

- Combine the Best Foods mayonnaise and horseradish and season to taste with cracked pepper and sea salt.
- To pickle the onions, marinate them in the vinegar and sugar for at least 30 minutes until they soften and turn bright pink.
- To serve, arrange the garlic toasted bread on a serving platter and top with a small dollop of horseradish mayonnaise then add a swirl of rare beef, add another dollop of mayonnaise on top and garnish with the pickled onion and microgreens.
