Mix the rice together with the sesame oil, soy sauce and chilli flakes.
Prepare the toppings - slice the broccoli into long stalks, sliced in half. Finely slice the spring onions, and defrost the edamame beans in the microwave for 2 minutes.
Heat a non-stick frying pan on high heat then add the rice. Stirring regularly, fry for 5-10 minutes to reduce the liquid and make the rice nice and crispy.
Whisk the first egg then add to the pan with the rice. Mix together to break up the egg, then remove from the pan and set aside. Keep the pan hot.
Add the broccoli to the pan and fry for 3-4 minutes to add a little char but keep it crunchy, then remove from the pan and set aside.
Dirty fry the second egg in the frying pan for 2-3 minutes to make the whites crispy and then yolk runny.
Assemble the bowl with the rice on the bottom, then top with the broccoli, edamame, egg, mayo, kimchi, spring onion and garnish with chilli oil. Enjoy!
