Marinade

  • 300g Firm Tofu, sliced into cubes
  • 1 Tbsp Soy Sauce
  • 1 tsp sesame oil
  • 1 tsp rice wine vinegar
  • ½ tsp crushed garlic
  • ½ tsp sugar

Batter

  • 1 Tbsp sesame seeds
  • 2 Tbsp cornstarch
  • 1 ½ Tbsp water
  • Pinch of salt

Salad

  • 2 cups shredded slaw mixture
  • A handful of spring onions, chopped
  • ½ a cucumber, sliced
  • ½ a red capsicum, sliced
  • 100g thawed edamame beans

Marinate the tofu

  1. Place the tofu cubes on a paper towel and pat them dry. Place them in a shallow dish.

  2. In a small bowl, whisk together the soy sauce, sesame oil, rice wine vinegar, ginger, garlic and sugar.

  3. Pour the marinade over the tofu and marinate in the fridge for 30 minutes, up to overnight.

Make the salad

  1. Combine all the salad ingredients together and divide between two bowls.

Batter and fry the tofu

  1. Mix the cornstarch, salt, water and sesame seeds to make a runny batter.

  2. Heat a pan over medium heat with a generous drizzle of oil.

  3. Dip each piece of tofu into the batter, shake off the excess and fry until golden on each side. Add more oil as you go if needed.

  4. Place the tofu pieces onto the salad and drizzle over the sesame dressing to serve.
