Ingredients
- 2 cups canned corn kernels
- 1/2 cup all-purpose flour
- 2 Tbsp Peri Peri mayonnaise
- 4 Tbsp milk
- 1 tsp baking powder
- 2 tsp paprika
- 1/2 tsp chilli flakes
- 2 Tbsp olive oil
- 1 spring onion
- 6 rashers bacon (optional)

(Optional) Cook the bacon in a pan until crispy, then chop into small pieces. Set aside.

In a large bowl, combine the corn, flour, baking powder, paprika, and chilli flakes. Add the Peri Peri mayo and milk, and stir to form a thick batter. Fold in the chopped bacon if using.

Heat olive oil in a non-stick pan over medium heat.

Spoon heaped tablespoons of batter into the pan. Flatten slightly. Cook for 2–3 minutes on each side, until golden brown and cooked through. Add more oil as needed between batches.

Finely slice the spring onion. Drain the fritters on paper towels and serve warm. Sprinkle with spring onion, serve with more peri peri mayo and enjoy!
