- 12 large scallops
- 1/2 cup Best Foods mayonnaise
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 6 streaky bacon slice, cut into half
To make the lemon mayo, put ¼ cup Best Foods Mayonnaise in a small bowl. Add the zest of the lemon, plus 1 tablespoon of lemon juice. Season with black pepper. Mix to combine and refrigerate until required.
Put ¼ cup Best Foods Mayonnaise in a medium size bowl. Mix in oregano, garlic powder and paprika.
Gently pat dry the scallops with a clean tea-towel or paper towel and then place in the mayo spice mix. Gently fold to coat, then wrap each scallop with a piece of bacon, securing with a toothpick.
Cook on a hot barbecue for with the bacon side down (keeping the scallops off direct heat), turn regularly to cook the bacon on all sides. Approx 10 minutes total.
Season with salt and pepper with lemon mayo on the side.
