- 500g steak
- sliced capsicum / onion / zucchini (optional)
- 2 tablespoon soy sauce
- 2 tablespoon Worcestershire sauce
- 1 tablespoon olive oil
- 1 cup Best Foods mayonnaise
- 2 chipotle pepper in adobo sauce
- squeeze of lime juice
Slice the steak into 2cm cubes and place in a container with the marinade ingredients. Stir to combine and allow the steak to marinade for at least 30 minutes.
Soak 12 medium sized wooden skewers in water for 20 minutes before preparing the skewers so that they don’t burn on the BBQ.
Thread the beef and veggies (if using) onto the skewers, leaving a small gap between them to help them cook through better. Reserve the marinade for cooking.
Heat BBQ to high heat and then cook the skewers for about 2-3 minutes on each side (8-12 minutes total) so that each side is browned and until the meat is cooked to your liking. Baste with marinade while cooking to boost the flavour.
To make the chipotle mayo: add all ingredients to the bowl of a food processor and blend until smooth.
