- 500g rump steak or sirloin steak
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1 red capsicum
- 1 yellow capsicum
- 1 red onion
- 4 tablespoon Best Foods mayonnaise
- 1 tablespoon chipotle sauce
- squeeze of lime juice
- 8 tortillas
- 2 avocados, sliced
- fresh coriander
Coat steak in olive oil and then the spices. Slice vegetables into thin strips.
Mix together chipotle mayo ingredients and chill until ready to use.
BBQ steak for a few minutes on each side until cooked to your liking. Set aside to rest then slice into thin pieces.
BBQ capsicum and red onion with some olive oil on the flat griddle until cooked through, approx. 10 mins.
Toast tortillas then serve warm topped with the grilled steak, capsicum, onion and sliced avocado. Drizzle over chipotle mayo and garnish with coriander.
