BBQ Vege Burger

  • 120 gram halloumi
  • 280 gram mushrooms
  • panko breadcrumbs
  • 4 slice tinned beetroot diced
  • Best Foods mayonnaise
  • 4 brioche bun
  • 1/2 white onion
  • 4 cheddar cheese slice
  • 1/2 cup pickles
  • butter
  • salt

Recipe Directions

  1. Take ½ cup of Best Foods mayonnaise and mix with diced beetroot and 1 tablespoon of beetroot juice.

  2. Blend mushrooms and halloumi cheese in a food processor. Transfer to a bowl, add ½ teaspoon of Best Foods mayonnaise and enough breadcrumbs so the mixture isn’t too wet. Shape into patties and cook on a medium heat BBQ. Cook for 3-5 minutes each side until golden brown. Season and then put a cheese slice on while it is still on the grill so it can melt.

  3. Butter and toast the buns on the BBQ, then put pattie with melted cheese on bottom bun.

  4. Top with the onions, pickles and a good helping of the beetroot mayo. Enjoy!
