Beef & Avocado Tacos with ‘Double Trouble’ Sauce

  • 540 grams flank steaks
  • 1/2 cup orange juice
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 ripe avocados
  • 1 cup Best Foods mayonnaise
  • 1 tbsp chipotle chilli powder
  • 8 soft taco shells
  • olive oil
  • lime juice
  • 600 grams tomatoes, roughly chopped
  • 1 red onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 1/2 cup coriander, chopped
  • 1 tbsp vinegar
  • 1 tsp sugar
  • salt to taste

Recipe Directions

  1. Place the steak in a bowl or baking dish. Add the cumin, paprika, garlic powder and orange juice. Mix well and leave to marinade for at least an hour. 4 hours is better.

  2. Preheat a hot plate or BBQ. Depending on the thickness of the steaks, grill the meat for between 2-3 minutes per side. If your grill is hot, this should be enough.

  3. Once the meat is ready, take it off the heat and rest on a pizza tray for at least 30 mins. This will relax the meat, hold the juiciness, and get the meat to a medium rare cook.

  4. In a bowl, scoop out the avocado and mash it. Season with salt and lime juice. Set aside.

  5. In another bowl, combine the salsa ingredients. Check seasoning and balance. Set aside.

  6. Warm the tortillas in a low oven or pan, then pull them out.

  7. Leave a little Best Foods mayonnaise to the side. Then mix 1 cup of the mayo with the chipotle powder to make a chipotle mayo.

  8. On each tortilla, lay down one layer of Best Foods mayonnaise as a base. Then build the taco as you wish.

  9. Finish with a layer of chipotle mayo on the top.

  10. Garnish with coriander and more lime, and attack.
