Beetroot & Carrot Hummus

  • 1x packet of coleslaw
  • 4x cloves garlic
  • 1x can chickpeas
  • 150ml Olive oil
  • 100g Best Foods Mayo
  • Zest and juice of 1 lemon
  • Smokey spice blend, or somked paprika

Recipe Directions

  • Preheat your oven to 200 degrees celsius.

  • Crush your garlic cloves and add them to the slaw mix with 25ml of olive oil. Combine this and add a little seasoning.

  • Roast in a hot oven at 200 degrees for 20 mins or until nice and soft .

  • Drain the chickpea can, discard the water.

  • Add chickpeas to a food processor, and start to blend with Mayo and oil. Once smooth add in the roasted slaw and blend again .

  • Keep blending and add in your spice mix and zest and juice of a lemon.

  • Season to your liking and serve with chips or pita breads!
