Ingredients 

  • 1/2 cup Best Foods light mayonnaise
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 teaspoon crushed ginger
  • 1/2 cup chopped cashews or peanuts reserved to garnish
  • 500 grams pork fillet trimmed cut into bite-sized pieces

Recipe Directions

  1. Combine marinade ingredients and toss with pork pieces, marinate for at least 30 minutes.

  2. Skewer onto metal or pre-soaked bamboo skewers and arrange on a lined tray.

  3. Bake in a preheated oven for 12-15 minutes or until golden and cooked through.

  4. Serve with an extra sprinkle of nuts, lemon wedges and summer salad.
