- 12 pieces of bread
- 2 cups leftover mashed potatoes
- 1/2 cup grated cheese
- 1/2 cup Best Foods mayonnaise
- Approximately 1 cup of leftover parsley, spinach, ham (optional)
- salt and pepper
Heat the oven to 180°C. Cut bread into circles using a cookie cutter or just cut off the crusts. Use a rolling pin to flatten slightly.
Lightly spray a muffin tin with cooking spray and press the bread into the tins.
In a bowl, mix together the leftover mashed potato, grated cheese, Best Foods Mayo and any other bits and pieces you like and season with salt and pepper.
Spoon the mashed potato filling into the bread cases and bake for 15 minutes or until golden brown.
Serve warm for an easy lunch or cool and pop into the kid’s lunchboxes!
