Chicken Salad with Crispy Croutons and Spicy Mayo

  • 1 tablespoon olive oil
  • 2 bread rolls
  • 2 eggs
  • 200 grams cooked chicken
  • 1/4 lettuce, chopped
  • 3 tablespoon Best Foods mayonnaise
  • 2 teaspoon Sriracha
  • 2 tablespoon Parmesan shavings

Recipe Directions

  1. Cut bread rolls up into small pieces and coat in olive oil. Bake at 200C fan bake for 12 minutes until golden and crunchy

  2. Boil eggs for 6 minutes then peel and cut into quarters

  3. Chop chicken into bite sized pieces

  4. Whisk together Best Foods Mayo and sriracha

  5. Arrange salad in bowls starting with lettuce then add chicken, croutons, egg and parmesan

  6. Top the salad with sriracha mayo and serve
