
Ingredients
- 1 cucumber
- 1 cup cooked sushi rice
- 1 carrot peeled and finely diced
- 1/2 cup Best Foods mayonnaise
- 1 tbsp sesame seeds
- 1 tsp sesame oil
- pinch of salt and pepper
Recipe Directions

Slice your cucumber into 2cm thick rounds. Take a spoon and scoop out seeds, leaving a layer at the bottom to hold the filling in.

Mix together rice, carrot, mayonnaise, sesame seeds, sesame oil and seasoning.

Carefully spoon the rice mix into the cucumber rounds and sprinkle with extra sesame seeds. Refrigerate until needed.
