Greek Lamb Tacos with Garlic Whipped Feta

Ingredients 

Lamb Koftas

  • 800 grams lamb mince
  • 1 red onion grated
  • 2 clove garlic crushed
  • 1 lemon zested
  • 2 teaspoon ground coriander
  • 2 teaspoon ground cumin
  • 2 tablespoon dried oregano
  • 2 tablespoon fresh flat leaf parsley leaf chopped
  • salt
  • ground black pepper
  • 1 handful pistachios crushed

Whipped Feta

  • 3/4 block feta cheese
  • 1/2 cup Best Foods mayonnaise
  • 1/4 cup sour cream
  • 1 clove garlic
  • 1 tablespoon oregano
  • 1/2 lemon juice
  • 1 lemon zested
  • salt
  • ground black pepper

Cucumber Salad

  • 1/2 cucumber diced core removed
  • 3 ripe tomatoes diced
  • olive oil
  • 1/2 lemon juice
  • handful fresh flat leaf parsley leaves
  • salt
  • ground black pepper

To Serve

  • 8 soft taco shell
  • handful mint chopped
  • handful fresh flat leaf parsley leaf chopped
  • pomegranate arils
  • salt
  • ground black pepper

Recipe Directions

  1. Add all lamb ingredients to a medium-large mixing bowl, mix together then season with salt and pepper. Cover then refrigerate.

  2. Place all whipped feta ingredients in a food processor and blend until it reaches a smooth velvety consistency. Season to taste with salt and pepper then set aside in the fridge.

  3. Toss all salad ingredients together then season to taste with salt and pepper, cover then refrigerate.

  4. Heat a gas or charcoal grill to medium-high heat then clean the grates once it has heated. While the BBQ is heating, portion mince up into 8 balls then roll onto skewers and shape into a sausage shape with hands, squeezing to get some texture through your fingers.

  5. Grill for 10-15 minutes turning every few minutes until lamb is cooked through and it forms a nice crust. Set aside to cool down then slide them off the skewers.

  6. Grill tacos for about a minute or until they get nicely charred then flip and repeat. (Tip: You can shape them around a bottle for 30 seconds and they will set in that natural taco shape).

  7. Fill tacos with Lamb Koftas, a spoonful of cucumber salad, a dollop of whipped feta then topped with pomegranate, a sprinkling of mint and parsley and a squeeze of lemon.
