Mini Vegetable Frittata Nests

  • 2 cups pre-cooked vegetables such as diced kumara, broccoli, potato
  • Fresh vegetables such as coloured peppers, chopped vine tomatoes, spring onions, peas
  • 5 eggs
  • 3/4 cup Best Foods mayonnaise
  • 1/4 cup milk or cream
  • salt to season
  • fresh herbs to season

Recipe Directions

  1. Combine pre-cooked vegetables with a few fresh vegetables.

  2. Spoon into small lightly greased dishes or a greased muffin tray.

  3. Beat 5 eggs with the Best Foods™ Mayonnaise and milk or cream. Season with salt and fresh herbs if desired.

  4. Pour the egg and mayonnaise mixture over the vegetables until nearly covered and bake at 180 degrees for about 15-20 minutes until golden and set.

  5. Let cool for five minutes then remove from the tins and serve warm.
