Mussel Fritters

A Kiwi classic – Coromandel mussel fritters with sweet chilli mayo. Recipe by Ganesh Raj created as part of the Best Foods Foodie Roadie, celebrating local producers.

  • 24 mussels
  • 1 tbsp chopped ginger
  • 1 tbsp chopped garlic
  • 1 tbsp lemongrass
  • 2 tbsp fish sauce
  • 2 chopped red chillies
  • 1 cup chopped coriander or parsley
  • 6 limes
  • sliced ginger to taste
  • 4 tbsp oil


  • 2 eggs
  • 1/2 cup milk
  • 1 cup standard flour
  • 1 tsp baking soda


  • 1 cup Best Foods mayonnaise
  • 2 tbsp sweet chilli sauce
  • a drop of lime juice for balance if needed

To serve

  • white bread

Recipe Directions

  1. Boil 2 cups of water in a pan big enough to hold the 24 mussels

  2. Add slices of ginger

  3. Put the mussels in, put the lid on, and simmer till the mussels open

  4. Remove mussels from shell and set aside

  5. Clean and de-beard the mussels.

  6. Chop the mussels to a medium roughness. Add to a mixing bowl.

  7. Grate the ginger, garlic and lemongrass and add to the mussel mix. Add the chopped coriander, chilli, lime juice and fish sauce. Combine.

  8. In a separate bowl, combine the batter ingredients. Beat the mixture until just smooth.

  9. Pour the batter a little at a time and combine into the mussel and herb mix.

  10. Heat oil in a pan over a medium heat.

  11. Cook all the fritters, a few at a time, till golden brown on both sides. Do not crowd the pan.

  12. Mix the Best Foods mayonnaise with the sweet chilli and set aside. Add a little lime to balance.

  13. Butter one side of bread. Lay the fritter down.

  14. Drizzle Best Foods mayonnaise on top of the fritter.

  15. Garnish with coriander and serve.
