Pork Sausages With 'Poor Man's Parmesan'

  • 1 coil of pork sausage
  • 1 cup chopped parsley, to garnish
  • salt and pepper, to taste

Poor Man's Parmesan

  • 2 tablespoon lemon, zested
  • 1 teaspoon garlic, crushed
  • 1/2 cup olive oil
  • 1 cup home-made breadcrumbs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Parsley Mayo

  • 1 bunch parsley
  • salt and pepper, to taste
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil
  • 2 cups Best Foods mayonnaise

Recipe Directions

  1. BBQ the sausage coil till cooked. Then set aside.

  2. Next, make the parsley mayo. Boil a pot of water.

  3. Blanch 1 bunch of parsley in the water for 30 seconds.

  4. Remove and cool in icy water.

  5. Drain the parsley in a colander.

  6. Lay the drained parsley onto a paper towel.

  7. Put the parsley in a blender; Add the lemon juice and olive oil; Blitz till smooth.

  8. Combine the bright green mixture with 2 cups of Best Foods mayo.

  9. To make the ‘poor man’s parmesan,' roughly chop or blend the old bread.

  10. Heat the olive oil in a pan, over medium heat.

  11. Fry the garlic for 10 secs, then add the breadcrumb and mix for 1 minute.

  12. Add salt, pepper and lemon zest.

  13. Combine and set aside.

  14. Plate up the sausage and sprinkle the ‘parmesan.'

  15. Garnish with parsley.

  16. Serve with Green Mayo.
