
Ingredients
- 1 coil of pork sausage
- 1 cup chopped parsley, to garnish
- salt and pepper, to taste
Poor Man's Parmesan
- 2 tablespoon lemon, zested
- 1 teaspoon garlic, crushed
- 1/2 cup olive oil
- 1 cup home-made breadcrumbs
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Parsley Mayo
- 1 bunch parsley
- salt and pepper, to taste
- 1 tablespoon lemon juice
- 1/4 cup olive oil
- 2 cups Best Foods mayonnaise
Recipe Directions

BBQ the sausage coil till cooked. Then set aside.

Next, make the parsley mayo. Boil a pot of water.

Blanch 1 bunch of parsley in the water for 30 seconds.

Remove and cool in icy water.

Drain the parsley in a colander.

Lay the drained parsley onto a paper towel.

Put the parsley in a blender; Add the lemon juice and olive oil; Blitz till smooth.

Combine the bright green mixture with 2 cups of Best Foods mayo.

To make the ‘poor man’s parmesan,' roughly chop or blend the old bread.

Heat the olive oil in a pan, over medium heat.

Fry the garlic for 10 secs, then add the breadcrumb and mix for 1 minute.

Add salt, pepper and lemon zest.

Combine and set aside.

Plate up the sausage and sprinkle the ‘parmesan.'

Garnish with parsley.

Serve with Green Mayo.
