Hot Dogs

  • 4 hot dog buns
  • 4 hot dog sausages, beef
  • 1 cup caramelised balsamic onions (recipe below)
  • 4 streaky bacon slices
  • 1 tablespoon chives, chopped
  • 2 tablespoons Best Foods mayonnaise
  • 1 tablespoon BBQ sauce
  • 1/4 tablespoon chipotle sauce
  • American mild mustard
  • 1 cup mozzarella cheese slice, grated

Balsamic Caramelised Onions

  • 300g red onion, sliced
  • 2 tablespoon brown sugar
  • 2 tablespoon balsamic vinegar
  • 2 tablespoon olive oil

Recipe Directions

Balsamic Caramelised Onions

  1. Add all ingredients to a pot or pan over low heat. Cook for 10-15 minutes, stirring frequently, until liquid is reduced and onions are dark, sweet and fragrant.

Hot Dogs

  1. Combine Best Foods Mayonnaise, BBQ sauce and chipotle sauce in a small bowl and mix well.

  2. Place skillet in BBQ, add oil and bring to a medium heat.

  3. Slow-fry bacon in skillet to ensure fat renders well without burning bacon, turning regularly. This will take 10-15 minutes resulting in beautifully crispy bacon. Set aside to cool completely, before finely dicing or crumbling in a food processor.

  4. While bacon is cooking, add sausages to indirect side of grill and cook through, rotating as required, until internal temperature reaches 71°C (160°F).

  5. Slice into buns lengthwise, open out and grill face down over direct heat until toasted.

  1. Add generous serving of balsamic caramalised onions to base of bun.

  2. Sit beef sausage over onions.

  3. Apply spicy BBQ-mayo dressing & American mustard

  4. Add mozzarella cheese

  5. Add bacon shards

  6. Add chives

  7. If needed, return assembled hot dog to BBQ or grill in oven to melt cheese.
