Vegetarian Tofu Rice Paper Rolls with Best Foods Mayonnaise Satay Sauce

  • 200 grams rice paper sheets
  • 300 grams firm tofu
  • 2 tablespoons soy sauce
  • 1/2 small cabbage cut
  • 1 cucumber julienned
  • 2 carrots julienned
  • 1 handful mint
  • 1/4 cup peanuts crushed or halved
  • 1 chilli thinly sliced
  • 1 spring onion thinly sliced
  • 1 lime cut into wedges

  • 2 tablespoons soy sauce
  • 2 1/2 tablespoons crunchy peanut butter
  • 1/4 cup water
  • 1/2 cup Best Foods mayonnaise with a spark of Chilli

Recipe Directions

Best Foods™ Mayonnaise Satay Sauce

  1. Take a large bowl and add peanut butter, soy sauce and Best Foods™ Mayonnaise with a spark of Chilli. Whisk until smooth.

  2. Separate 2 tablespoons of mixture - this will be used to coat the baked tofu.

  3. Slowly add the water a little bit at a time and continue to stir. Continue to add water until you get a desired consistency.

For the Tofu

  1. Heat the oven to 175º C and line a baking tray.

  2. Take a paper towel or tea towel, wrap it around the tofu and press to absorb any moisture.

  3. Cut each piece of tofu into 8 slices and then cut each slice into thirds to make 24 sticks.

  4. Place the tofu in a shallow dish and sprinkle with soy sauce on both sides before spreading the Best Foods™ Mayonnaise Satay Sauce onto each piece. Lay each piece on the baking tray.

  5. Place in the oven and bake for 15 minutes before turning the tofu sticks and baking for a further 15 minutes.

  6. Remove the tofu from the oven and allow to cool.

For the Rolls

  1. Lay out a chopping board or tea towel on a flat surface. Using one sheet of rice paper at a time, dip into a bowl of hot water and soak for 30 seconds or until pliable.

  2. Start filling the wrapper, place the mixture between the half way mark of the round leaving an edge all four sides.

  3. To fill, put two mint leaves at the bottom, followed by a small handful of cabbage, followed by vegetables sticks and two sticks of tofu. Add some coriander, two slices of chilli, a few slices of spring onion and a sprinkle of peanuts to finish.

  4. Fold in both the sides edges first. Securely fold the top edge over the filling to enclose, then carefully close up the bottom end.

  5. Repeat with remaining rice paper sheets and filling.

  6. Cut rolls in half and serve on a platter for the everyone to enjoy with the sauce in the middle.
