  • 1 kg baby potatoes, quartered
  • 2 diced carrots, boiled until tender
  • 200 grams canned pineapple chunks
  • 1/4 white onion, finely diced
  • 1/4 cup fresh parsley, roughly chopped
  • 1/2 cup Best Foods Real Mayonnaise

Recipe Directions

  1. Cook the potatoes in boiling, lightly salted water for 15-20 minutes or until tender. Drain and leave to cool

  2. Hard boil eggs for 8-10 minutes and set aside to cool. Once cool, peel and cut into quarters

  3. In a large mixing bowl, combine the potatoes, carrot, pineapple, onion and parsley

  4. Mix in Best Foods Real Mayonnaise, and season with salt and pepper. Finish with extra freshly ground pepper and serve
