Vodafone Warrior Hayze Perham’s ‘Uncle’s Magic’ Potato Salad with Chorizo & Sundried Tomatoes

  • 1 kg baby potatoes, quartered
  • 200 grams chorizo sausage, cubed
  • 1/2 cup sun-dried tomatoes
  • 1 sliced onion, caramelised (or 1/2 cup pre-made)
  • 1/2 cup Best Foods Real Mayonnaise
  • pinch of smoked paprika

Recipe Directions

  1. Cook the potatoes in boiling, lightly salted water for 15-20 minutes or until tender. Drain and leave to cool

  2. 2. Lightly pan fry the cubed chorizo over a medium heat, then transfer to a large bowl. Add the sun dried tomatoes, caramelised onions and potatoes, then season with salt and pepper

  3. Mix through Best Foods Real Mayonnaise, then transfer to a serving bowl and finish with a sprinkle of smoked paprika
