Ingredients
- 6 corn tortilla taco shells
- 1 tsp olive oil
- 1 brown onion
- 400g beef mince
- 1 tsp paprika
- 1 tsp garlic powder
- 1/4 cup gherkins
- 1 tomato
- 1 cup lettuce
- 1/2 cup edam cheese
- Garnish with Burger Mayo

Preheat the oven to 180°C fan bake. Toast the taco shells for 2 minutes until a little crunchy then set aside.

Prep the ingredients - dice the onion and gherkins. Dice the tomato and shred the lettuce. Grate the cheese and set aside.

Heat the oil in a large pan over medium heat. Add the diced brown onion and cook for about 2–3 minutes until soft and fragrant. Add the beef mince to the pan and cook, breaking it up with a spoon, until it’s fully browned. Stir in the paprika and garlic powder, season with salt and pepper, and cook for another minute to bring out the flavour. Remove from heat then mix the gherkins through the mince mixture.

Divide the mince mixture into the taco shells, then lay the taco shells in an oven dish. Cover with the grated cheese then bake for 10 minutes until lightly golden.

Whilst hot, sprinkle the lettuce and tomato on top of the tacos then garnish with the burger mayo. Serve warm and enjoy!
