Prep the vegetables - finely dice the onion, peel and grate the carrot and grate the courgette.
Heat a non-stick frying pan on medium to high heat with the olive oil spray, then add the onion and cook for 2-3 minutes.
Add the mince, garlic, carrot and courgette and saute until the mince is lightly browned.
Reduce the heat then add the tomato paste, paprika, cumin, chilli flakes and water, and simmer for 10-12 minutes to reduce the water and develop the flavours.
Meanwhile, whisk together the mayonnaise, sriracha, lime juice and garlic powder.
Separate the lettuce leaves and grate the mozzarella.
To assemble the wraps, cut a slit in the wrap to about the middle point. Spread a quarter of the wrap with the mince mixture, another quarter with the cheese, a third quarter with the spicy mayo and the fourth quarter with the spicy mayo. Fold one quarter over the other to create a triangle wrap sandwich!
Fry the wrap briefly on either side to melt the cheese, then serve!
