Steak Salad with Truffle Dressing

  • 2x pieces of beef steak (sirloin, eye fillet etc.)
  • 300g baby potatoes
  • 1 tsp dried rosemary
  • 2 cups of rocket
  • 2 Tbsp olive oil
  • ½ a red onion, sliced thinly
  • 1 x red capsicum, sliced
  • 30g shaved parmesan cheese
  • 2-3 Tbsp of Best Foods Truffle Mayo

  1. Boil the potatoes in a pot of boiling water for 8-10 minutes or until tender. Drain and set aside.

  2. Season the steaks with salt and pepper.

  3. Heat a pan over a high heat with half the olive oil. Grill the steaks for 3-4 minutes on each side or until cooked to your liking. Remove from the pan and set aside to rest before slicing.

  4. Smash the potatoes with a fork, then add them to a bowl with the red capsicums. Toss in the remaining olive oil and season with the rosemary, salt and pepper.

  5. Grill the capsicum and potato in the hot pan until they are tender and charred.

  6. Assemble the salad by placing the rocket, parmesan and sliced red onion on the plates. Then top with the potatoes, capsicum and slice steak.

  7. Drizzle the truffle dressing over the dish to serve.
